Hotel De Bilt – Utrecht collaborates with Fungi Factory for the cultivation of oyster mushrooms. These are grown on coffee grounds from our cups of coffee from the restaurant. In Utrecht, about 10 million kilos of coffee grounds are thrown away every year.
To deal with waste in a smarter way, the coffee grounds are now collected by Fungi Factory and used to grow oyster mushrooms. Our chef makes bitterballen and croquettes from the oyster mushrooms, which are on our menu. The residual product is further processed in our vegetable garden, which completes the circle.
